Warm, creamy, and loaded with seafood goodness, this soup is perfect for cozy lake day.
Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3/4 cup sweet potato, peeled and diced
- 5 small red potatoes, peeled and diced
- 1/2 cup red bell pepper, diced
- 1/2 cup sweet onion, diced
- 1/2 cup fresh sliced mushrooms
- 2 tablespoons flour
- 1 tablespoon CRAVE Cajun Seasoning, plus more to taste
- 1 teaspoon fresh minced garlic
- 4 cups chicken broth
- 1/2 cup clam juice
- 1/2 cup heavy cream
- 1/2 lb shrimp, peeled, deveined, cleaned, and patted dry
- 1/2 lb scallops, cleaned and patted dry
- 1/2 lb frozen cooked mussels, thawed and removed from shells
- 2–3 handfuls fresh spinach
- Crushed red pepper flakes, optional, for garnish
Mussel Note
For this recipe, I use frozen cooked mussels. Let them thaw, remove them from their shells, and keep them refrigerated until you're ready to add them to the soup.

Instructions
- In a large pot, melt the butter with the olive oil over medium heat.
- Add the diced sweet potatoes and red potatoes. Sauté for about 8 minutes, stirring occasionally.
- Add the red bell pepper, sweet onion, and mushrooms. Cook for another 5 minutes.
- Sprinkle the 2 tablespoons flour over the vegetables and stir until everything is evenly coated.
- Cook for about 1 minute, stirring, to cook off the raw flour taste.
- Gradually pour in the chicken broth, stirring well to incorporate the flour.
- Cook for about 3 minutes, stirring occasionally.
- Add the minced garlic, clam juice, heavy cream, and CRAVE Cajun Seasoning.
- Bring the soup to a gentle simmer and continue cooking until the potatoes are fork-tender but not mushy.
- Add the shrimp and cook for about 2 minutes.
- Add the scallops and cook for another 2–3 minutes, or until the shrimp and scallops are just cooked through.
- Add the cooked mussels and fresh spinach.
- Gently stir until the mussels are heated through and the spinach has wilted.
- Taste the broth and adjust the CRAVE Cajun Seasoning as needed.
- Ladle into bowls and garnish with a sprinkle of crushed red pepper flakes, if desired.
