Cozy Chicken Pot Pie | Easy Homemade Comfort Food Recipe

This hearty dish is filled with tender chicken, savory vegetables, and a rich, creamy gravy that comes together in every satisfying bite. Baked until perfectly bubbly and crisp on top, it’s the ultimate cozy meal—perfect for family dinners, chilly nights, or whenever you’re craving classic comfort food done right.

This pot pie is warm, cozy, and packed with comforting flavor in every bite.

Ingredients

Chicken & Filling

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3 boneless, skinless chicken thighs, excess fat removed and cut into chunks
  • 1 tablespoon CRAVE Italian Seasoning
  • 1 tablespoon CRAVE Cajun Seasoning
  • 1 1/2 teaspoons poultry seasoning
  • 1 1/2 teaspoons marjoram
  • 1/2 cup celery, diced
  • 1/2 yellow onion, diced
  • 1 teaspoon minced garlic
  • 4 tablespoons flour
  • 4 cups chicken broth
  • 1/4 cup milk
  • 1/4 cup heavy cream
  • A couple shakes of hot sauce
  • 1 cup frozen carrots
  • 1 cup frozen peas

Topping

  • 1 sheet puff pastry, thawed enough to handle
  • Melted butter, for brushing

Instructions

Cook the Chicken

  1. Melt 1 tablespoon butter with 1 tablespoon olive oil in a medium skillet over medium heat.
  2. Add the chicken and season with the CRAVE Italian Seasoning, CRAVE Cajun Seasoning, poultry seasoning, and marjoram.
  3. Sauté the chicken for about 8 minutes, or until cooked through.
  4. Remove the chicken from the skillet and set aside.

Make the Creamy Filling

  1. Add the onion, celery, and garlic to the same skillet.
  2. Cook for about 7–8 minutes, or until the vegetables have softened.
  3. Sprinkle in the flour and stir until the vegetables are evenly coated.
  4. Cook for about 1 minute, stirring constantly.
  5. Gradually add the chicken broth, followed by the milk and heavy cream, stirring well to incorporate everything and scrape up the flavorful bits from the bottom of the skillet.
  6. Add a couple shakes of hot sauce.
  7. Bring the mixture to a gentle simmer and cook for about 10 minutes, stirring occasionally as the sauce begins to thicken.
  8. Add the frozen peas and carrots.
  9. Return the cooked chicken to the skillet.
  10. Simmer for another 10 minutes, allowing the flavors to come together.
  11. Taste and adjust the seasonings as needed.

 

Assemble & Bake

  1. Preheat the oven to 400°F.
  2. Transfer the creamy chicken filling to a baking dish.
  3. Carefully place the puff pastry over the top of the filling.
  4. Lightly brush the pastry with melted butter.
  5. Cut a few small slits in the top of the pastry to allow steam to escape.
  6. Bake at 400°F for about 20 minutes, or until the filling is bubbling and the pastry is puffed and golden brown.
  7. Remove from the oven and allow the chicken pot pie to cool slightly before serving.
