This bowl is a perfect mix of fresh and flavor, with just the right amount of heat.
Ingredients
Shrimp, Salmon & Rice
- 1/2 lb shrimp, peeled, deveined, cleaned, and patted dry
- 1 lb salmon, skin removed, rinsed, patted dry, and cut into chunks
- 2 cups uncooked rice, white or brown
- 2 tablespoons butter, divided
- 2 tablespoons olive oil, divided
Seafood Marinade
- 4 tablespoons honey
- 2 tablespoons chipotle peppers in adobo, finely diced with some of the sauce
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 jalapeño, diced
- 2 tablespoons red onion, diced
- 2 tablespoons fresh garlic, minced
- 1 tablespoon olive oil
Toppings
- 3/4 cup petite tomatoes, halved
- 1/2 cup red onion, diced
- 1 cucumber, diced
- 1 avocado, sliced
- 1 handful fresh cilantro, rinsed, dried, and chopped
- 1 can black beans, drained and rinsed
- Smoked paprika, to taste
- Cumin, to taste
- Garlic powder, to taste
- Onion powder, to taste
Honey Chipotle Sauce
- 1/3 cup sour cream
- 1 tablespoon honey
- 2 teaspoons chipotle peppers in adobo, finely diced
- 1 teaspoon fresh minced garlic
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- Juice of 1/2 lime



Instructions
Make the Honey Chipotle Sauce
- Combine the sour cream, honey, chipotle peppers, minced garlic, cumin, smoked paprika, salt, and fresh lime juice.
- Mix well and set aside.
Marinate the Seafood
- Combine all the marinade ingredients and mix well.
- Divide the marinade evenly between two separate resealable bags or containers.
- Add the shrimp to one and the salmon to the other.
- Refrigerate and marinate for 1 hour.
Cook the Seafood
- Remove the shrimp from the marinade and discard the used marinade.
- Heat 1 tablespoon butter and 1 tablespoon olive oil in a skillet over medium-high heat.
- Add the shrimp and sauté for about 5 minutes, or until cooked through. Remove from the skillet and set aside.
- Add the remaining 1 tablespoon butter and 1 tablespoon olive oil to the skillet.
- Remove the salmon from its marinade, discard the used marinade, and add the salmon to the skillet.
- Cook for about 3–4 minutes per side, or until the salmon is cooked through and flakes easily. Remove from the skillet.
Prepare the Rice & Beans
- Cook the rice according to the package directions.
- Warm the black beans and season with smoked paprika, cumin, garlic powder, and onion powder to taste.
Build the Bowls
- Add the cooked rice to the bottom of each bowl.
- Top with the honey-chipotle shrimp and salmon.
- Add the seasoned black beans, tomatoes, red onion, cucumber, and sliced avocado.
- Drizzle the Honey Chipotle Sauce over the top.
- Finish with fresh chopped cilantro.
