Ingredients
- 3 tablespoons butter
- 1/4 cup red bell pepper, diced
- 1/4 cup scallions, diced, plus more for garnish
- 1 cup heavy cream
- 1 teaspoon fresh minced garlic
- 1 1/2 cups chicken broth
- 1/2 cup water, plus more as needed
- 1 cup grits
- 1/4 cup garlic & herb cream cheese
- Salt and black pepper, to taste
- Parmesan cheese, for garnish
Instructions
- Melt the butter in a medium-sized pot over medium-low heat.
- Add the diced red pepper and scallions. Sauté for about 2 minutes.
- Add the minced garlic, heavy cream, chicken broth, and water.
- Increase the heat and bring the mixture to a boil.
- Slowly whisk in the grits.
- Reduce the heat to a simmer and continue whisking for about 5 minutes.
- Cover and simmer for about 30-45 minutes, stirring often, or until the grits are soft and creamy.
- Stir in the garlic & herb cream cheese until completely incorporated.
- Season with salt and black pepper to taste.
- If the grits become too thick, add a little more water as needed until they reach your desired consistency.
- Garnish with Parmesan cheese and additional scallions before serving.
