Ingredients
French Toast Mixture
- 1 egg
- 1/4 cup milk
- 1 tablespoon sugar
- 1 teaspoon vanilla extract
Sandwiches
- 8 slices brioche bread
- Pistachio spread, as desired
- 1/2 cup semi-sweet chocolate, grated
- 1/2 cup bittersweet chocolate, grated
- Butter, for the skillet
Toppings
- Pistachio sauce
- 1/4 cup pistachios, crushed
- Extra chocolate shavings
- Powdered sugar, optional
Instructions
Prepare the French Toast Mixture
- In a shallow dish large enough to dip the sandwiches, add the egg, milk, sugar, and vanilla extract.
- Whisk together until well combined and set aside.

Prepare the Chocolate
- Using a vegetable peeler or cheese grater, grate the semi-sweet and bittersweet chocolate into a bowl or onto a plate.
Lake Vibes Tip: If you prefer a sweeter chocolate filling, use all semi-sweet chocolate or substitute milk chocolate.
Assemble the Sandwiches
- Lay all 8 slices of brioche bread flat on your work surface.
- Spread pistachio cream over 4 slices, using as much as you like.
- Spoon the grated chocolate over the remaining 4 slices.
- Place one chocolate-covered slice together with one pistachio-covered slice to make a sandwich. Repeat until you have 4 sandwiches.
Cook the French Toast Sandwiches
- While assembling the sandwiches, heat a skillet over medium-low heat. If using an electric skillet, aim for approximately 275–300°F.
- Add a little butter to the skillet and allow it to melt.
- Quickly dip one side of each sandwich into the egg mixture, then flip and dip the other side. Let any excess mixture drip off.
- Place the sandwich into the heated skillet. Avoid overcrowding the pan.
- Cook until the bread is golden brown and the filling is warm and melted, flipping to cook both sides. Cook for about 3–5 minutes per side, or until golden brown and the chocolate inside is melted.
13. Remove from the skillet and cut each sandwich down the middle.
Garnish & Serve
Drizzle with pistachio sauce and finish with crushed pistachios, chocolate shavings, and a dusting of powdered sugar.
Serve warm while that chocolate and pistachio filling is nice and gooey.
