Coastal Fiesta Salad

This vibrant shrimp salad is a refreshing twist on healthy eating—quick, easy, and packed with flavor! Juicy shrimp, sweet corn, cherry tomatoes, creamy avocado, crisp red onion, hearty black beans, and crunchy broccoli come together in a perfect balance of textures and tastes. Tossed in a light oil and vinegar dressing, this salad is both nourishing and delicious. Whether as a light lunch or a satisfying dinner, it’s a wholesome meal that’s as easy to make as it is to enjoy!

1lb Shrimp (clean, devein, and pat dry)

2 Avocados (diced)

1 Cup Broccoli (rinse, dry, cut into florets)

1 Cup Small Tomatoes (cut in half)

1/4 Small Red Onion (diced)

1 Can Corn (drained, rinsed)

1 Can Black Beans (drained, rinsed)

Primal Kitchen Avocado Oil and Vinegar Dressing and Marinade

Smoked Seasoning

Garlic Powder

Onion Powder

Season Shrimp with the seasoning

Broil, Grill or Saute Shrimp until done

Let shrimp cool

Pour Dresssing in a bowl

Add 2 Tbsps of Smoked Seasoning

Add 1 Tbsp of garlic and onion powder

Mix Well

Add all the veggies together in a bowl

Add shrimp to the top

Pour dressing over
