Shrimp Fajitas with Avocado Cream Sauce

Enjoy a quick and delicious meal with these Shrimp Fajitas with Avocado Cream Sauce! Makes 6 Servings

Preheat oven to 425 degrees

Peel and Devein 1lb Shrimp (clean & pat dry)

Slice 1 each Red, Yellow, Green Peppers, and Red Onion

From the jar Dice (3) Chipotle Peppers (add some of the juice)

Add Peppers, Onions and Shrimp to a cookie sheet

Add Chipotle Peppers, Smoked Seasoning, Garlic Powder, Onion Powder & 1/4 Cup of Olive Oil

Mix Well

Add Juice from (1) Lime

Roast for about 10-12 minutes or until Shrimp are done and Veggies are tender crisp

Avocado Cream Sauce

1/4 Cup of Sour Cream

1 Ripe Avocado

2 Tbsps Minced Cilantro

1 Tbsp Minced Garlic

1 Tbsp Chipotle Peppers w/ Juice

1/4 Small Red Onion

Juice of a Lime

Smoked Seasoning

Few Shakes of Hot Sauce

Salt to Taste

Blend all ingredients

If the sauce is too thick, Add 1/4- 1/2 cup of juice from the fajita mixture once done

Mix in until desired consistency

Wrap Tortilla Shells in foil and place in oven for about 5 minutes to heat






Build Fajita

Add Fajita Mixture

Drizzle with Avocado Cream Sauce

Drizzle a little juice from the chipotle peppers(if you like it spicy)

Add a slice of avocado & Chopped Cilantro
