Seafood Tortellini

This dish is a must have when we have cousin day at the lake. My cousin Shelby requests it each time…I hope your family enjoy it as much as mine! It’s a rich and satisfying dish that’s perfect for a family gathering or special occasion. Tender cheese-stuffed tortellini is paired with succulent shrimp and scallops, all bathed in a luscious sauce made with heavy cream, Swiss, and Gruyère cheeses. The combination of creamy, cheesy goodness with the delicate seafood flavors makes this dish both indulgent and comforting. It’s a filling, crowd-pleasing meal that’s sure to impress and leave everyone asking for seconds!

Ingredients

1lb Shrimp

1 lb Bay Scallops

5 Tbsp Butter

5 Tbsp Olive Oil

1 Package 5 Cheese Tortellini

Quart Heavy Cream

1 cup Swiss Cheese

1 cup Gruyere Cheese

6 oz Garlic and Herb Cream Cheese

2 Tbsp Garlic

With Love All Purpose Seasoning

With Love Italian Seasoning

2 Handfuls Fresh Spinach

Chives

Steps to prepare

Heat 3 Tbsp butter and  olive oil on medium heat

Saute shrimp(sprinkle with seasoning) until done about 3-4 minutes per side

Remove from heat and add scallops(sprinkle with seasoning) add more butter and oil oil if needed 

Saute until done about 4 minutes

Remove

Add heavy cream  2Tbsp seasoning, 2 Tbsp butter, garlic and cream cheese

Mix well until cream cheese melts

Add swiss and gruyere

Stir until melted 

Cover and Simmer for about 15 minutes

Turn heat off and add seafood

While simmering cook pasta according to package 

Once pasta is done 

Drain and add to sauce

Mix in spinach

Adjust Seasoning

Garnish with chives
